Chef Profile - Mats Larsson
The Red Rocks Visitors Center and Amphitheater and ARAMARK are pleased to feature Mats Larsson as their executive chef. Chef Larsson has extensive experience in the world of culinary arts having recently served as Sous Chef at Rock Bottom Brewery in Boulder, Colorado.
Originally from Amal, Sweeden, Chef Larsson received his training from Trolhattan Culinary School where he graduated at the top of his class. Chef Larsson also has trained under and worked with chefs actively competing in Bocuse D’or, a highly prestigious culinary competition. Prior to joining ARAMARK, Chef Larsson served as Executive Chef at The Copper Grill in Destin, Florida. In addition to his many awards,
citations, and contributions, Chef Larsson also effectively manages a staff of over 20 cooks and pantry personnel. He was an active member in the Swedish Culinary Association before moving to the United States.
Some of his more outstanding accomplishments include:
• Cooked in several restaurants ranked in the Michelin Guide
• Assisting in the Red Rocks Greening initiatives by facilitating both recycling and composting programs
• Providing a unique dining experience to over 1500 delegates during the 2008 Democratic National Convention
• Preparing backstage meals for many high profile artists at Red Rocks Amphitheater including James Taylor, Willie Nelson and The Allman Brothers Band
